Cooking with Danica! :)

Hi guys! I have been quite the bizzzzzy bee! I have been staring at this paint sample on the fireplace for months and I finally got brave and painted! It was a TON of work! The stone around the entire fireplace is distressed and has a million little holes so I had to sponge paint all of those little holes in first then paint it. Whew! But I must say it was worth it! I love the end result!

We had to empty out the room to get ready for our furniture to be delivered. Washed the floor too!

 I went over to my Weight Watcher meeting and I was down 2 pounds this week. :) I tracked really well and ate about 3/4 of my weekly points.

I was waiting for Danica to come over to join me for the day...she was gonna distract me while I waited  for the furniture to be delivered. lol

She wanted to try out my Turkey Meatloaf muffins so I got to cooking! This recipe can be made a few ways here is how I did it yesterday.

Turkey Meatloaf Muffins
Makes 12
3 PointsPlus each

1 package lean ground turkey
1/2 large red bell pepper, diced
1 large carrot, grated
1/2 large onion, diced
1 zucchini, grated
1/2 cup water
1 6 oz box of stuffing mix
1/2 teaspoon garlic powder
1 teaspoon black pepper
2 egg whites

Here are the veggies...
Add egg whites, pepper, garlic powder, stuffing mix, & turkey...
Mix well...
Sprayed a muffin pan with PAM & started scooping the mix in!
 Bake at 350 degrees for 45 minutes.
We enjoyed them with a little side salad for a filling lunch! 

 Dessert was some fruit and we split a sample pack of Weight Watchers new treats...I didn't really care for them, but then again I'm not a fan of their packaged stuff. :-/

 I needed more of a distraction from waiting so I busted out the Wii!
 I noticed the picture I took of Danica didn't make it in the email she sent me...hummm lol

 trying to play... lol or not tip over? Good times! haha

Time flies when Danica & I are together chatting so we started to get HUNGRY for dinner! We both agreed on POTATO SKINS! :)

We microwaved the potatoes for a little bit so they were soft enough to scoop out the center... We decided last minute to try ONE sweet potato too... All scooped out & ready to return to oven. We sprayed them with PAM and baked for 15 more minutes to get browned.
Here they are with some color...all ready to fill!
We added Turkey Bacon, green onions & reduced fat cheese to each one...


Returned them to a HOT 450 degree oven and waited for the cheese to melt.
They were YUMMY! ESPECIALLY the sweet potato version! I wish we had made ONLY those ones! WOW! 

These came out to 3 pointsplus each! They were delicious! Next time I think a better melting cheese would make me happier. :)

 I found my favorite blue cheese dressing!
 Nice stats! 2 TB for 1 PointsPlus!
 Another salad to go with our meal...

 The day flew by and before I knew it the furniture had arrived! :)



Yipeeee now I need to get pillows, lamps, & the never ending search for artwork! lol

    Your furniture looks amazing. Art work usually finds me when I least expect it!

    I never thought to make sweet potatoes that way - gonna have to try it.

    Meatloaf is one of the few ways I like hamburger! Those look like nice portion controlled servings.

  6. I so enjoy reading about you and Danica as your friendship develops. I have a special friend, too, who shares my Weight Watchers experience. We haven't cooked together yet but we have shared lots of recipes. It sure helps to have the support of someone special.

  13. Hi Lisa! That is by far my favorite bottled blue cheese dressing and well worth the hunt! lol We moved a lot over the past few years so I am always searching for it! I live in California so I can find it at WINCO FOODS and RALEYS Supermarket. I hope you are able to find it soon...oh maybe check to see if they have a web site? I'm gonna go look myself! :)

  17. Making these meatloaf muffins now..I noticed your recipe calls for 1/2 cup water but you don't add it with the mixture in your directions...I just omitted it this time because the mixture seems pretty moist.

    1. Hi Jolene! That is right! I did leave out that I added it. But yes I normally do add it in because of the seasoning from the stuffing mix- but with all of the vegetables they do come out very moist! Hummm I think I need to make these again soon! :) Thanks for the reminder! :)

    1. Hey Ellen- the turkey I buy comes in 1 & 1/3 - 1/4lb packs. I just use one pack. :) You made me want to make some for myself too! :) YUM!
