Let’s Get Greeky!

 

I ate a fantastic Greek salad at the hotel we stayed at in Baltimore for Fitbloggin. It made me crave MORE Greek in my life so I had to go get some ingredients to satisfy my appetite!

For my salad base I used a mix of baby greens & romaine lettuce.

Feta! This is a reduced fat version that I picked up. Not as creamy, but just as flavorful!

I wanted to add some protein- so I added on some garbanzo beans.

Ya can’t have a Greek salad without the Kalamata olives! & I wanted a little kick so I tossed on some mild pepper rings. So good!

If you wanted a little crunch factor you can top it with croutons too!

Now for the dressing!

Greek Dressing

Recipe Makes 5 ounces (10 Tablespoons)  7PP for the whole jar OR 2TB for 1PP

  • 2oz red wine vinegar
  • 1oz olive oil
  • 1oz water
  • 2TB lemon juice
  • 1 TB dijon mustard
  • 1 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

  7. I have a super-simple greek salad: halved yellow pear tomatoes, diced cucumber, then dressed with a tiny bit of olive oil and sea salt. I know, simple, but it really hits me just right, and is great hummus or falafel.

    By the way, I'm back! You were so so supportive to me, and just wanted you to know that because of many things going on, I absolutely must get my health, and that of my family's, as under control as possible. Would appreciate it if you can take time to visit my blog again, from time to time.
