I ate a fantastic Greek salad at the hotel we stayed at in Baltimore for Fitbloggin. It made me crave MORE Greek in my life so I had to go get some ingredients to satisfy my appetite!
For my salad base I used a mix of baby greens & romaine lettuce.

Back to the ingredients!
Tomatoes!

Feta! This is a reduced fat version that I picked up. Not as creamy, but just as flavorful!

I wanted to add some protein- so I added on some garbanzo beans.

Ya can’t have a Greek salad without the Kalamata olives! & I wanted a little kick so I tossed on some mild pepper rings. So good!

If you wanted a little crunch factor you can top it with croutons too!

Now for the dressing!
Greek Dressing
Recipe Makes 5 ounces (10 Tablespoons) 7PP for the whole jar OR 2TB for 1PP
- 2oz red wine vinegar
- 1oz olive oil
- 1oz water
- 2TB lemon juice
- 1 TB dijon mustard
- 1 teaspoon garlic powder
- 1/4 teaspoon oregano
- 1/8 teaspoon salt
- 1/8 teaspoon pepper

ReplyDeleteI have a super-simple greek salad: halved yellow pear tomatoes, diced cucumber, then dressed with a tiny bit of olive oil and sea salt. I know, simple, but it really hits me just right, and is great hummus or falafel.
