Hi guys! I cooked last night and I really felt like sharing this recipe with you all. Since I stopped eating most frozen meals one that I missed was the Smart Ones that has the Mexican rice with black beans. I honestly can’t remember what it was called- but I loved it with baked tortilla chips or even scooped up in a tortilla.
So I decided to whip up my own version with what I had on hand. I blogged a while back about Soy Chorizo…and mentioned that I had never eaten REAL chorizo before. Kinda funny, but I know that my gallbladder- less body would probably hate me for the fat content. lol Well I used soy chorizo in this recipe, this one to be exact-



Soy Chorizo Rice
makes 10 (packed) cups
serving size is 1 cup = 5WW PP
1 whole package Soy chorizo
4 Cups cooked brown rice
1 can low sodium black beans
2 red bell peppers- diced
1 medium onion- diced
1 4 oz can diced green chilies
(this would be great with corn in it too! I didn’t have any on hand)
In a saute pan sprayed with PAM add in bell peppers & onions. Cook until soft and starting to brown. Set aside.
Add soy chorizo to a fry pan sprayed with PAM. This is already cooked, so you just need to heat it up a little.
When heated add to a large mixing bowl & toss in the cooked rice. Stir well to mix rice & chorizo together. The soy chorizo almost sort of disappears and creates a sauce.
Add peppers, onions, and green chilies to the mixing bowl & toss it all together to combine.
Serve as a rice side dish or as a filling for burritos, or tacos!
I had my favorite Mission Extra Thin corn tortillas on hand so TACOS it was! Topped with cheddar cheese & jalapenos for a delicious meal!

DeleteI think I know which SmartOnes you're referring to. Was it called Southwest something? I loved it too, but I try not to do any frozen meals anymore and stick with the fresh stuff.

YES! You know which one I mean! :) It's also one of Sean's favorites- and he LOVED this dinner. He ate it out of the bowl topped with cheese- no tortillas. :)
